Additionally, participants will prepare their own hogget sausages from scratch and explore various curing techniques with the Head Charcutier. They'll even create their own hogget charcuterie, such as bresaola or salami, which will be stored under perfect drying conditions and mailed out once ready to eat. On the day, participants will take home their expertly butchered hogget and homemade sausages, ready to cook and savour.
